1 pound (450g) – 2 large duck breasts (with skin-on)
Pinch of Salt
Pinch of Pepper
1 bunch of Asparagus
1 tablespoon Lemon Juice

Use a sharp knife to score the skin, and then season the duck breast meat with salt and pepper.
Step 2
Heat an oven-safe skillet over medium-high heat. Cook the duck breasts skin side down for about 5 minutes.
Once you can see the skin is crispy and lightly golden, turn the breasts over and cook for 1 minute.
Remove the pan and place the skillet in the oven.
Step 3
Cook in the oven for about 7 minutes. Then, remove and let the meat rest on a board for at least 10 minutes.
Step 4
Cook the asparagus in a hot skillet with the rendered duck fat. You can season with salt and pepper. Drizzle with lemon juice and mix well. Then, bake in the oven for 6 minutes.
