When I first tried this carnivore cottage cheese flatbread, I didn’t expect it to be so simple and satisfying.
Sometimes the easiest recipes turn out to be the most rewarding, and this flatbread is a perfect example.
You only need two main ingredients- eggs and cottage cheese – and a pinch of seasoning if you like. There’s no rising time, no kneading dough, and no fussing with yeast.
In just a few minutes of prep, you’ll blend the batter until it’s smooth and pour it onto your baking sheet.
Beyond its simplicity, this flatbread fits perfectly into a meat focused diet. It provides a good amount of protein from the cottage cheese and eggs, so it can be a standalone snack or the base for other toppings.
You can fold it, roll it, or tear it apart to soak up sauces and juices from your favorite carnivore dishes.
👍 Why You’ll Love This Recipe
Quick to Prepare: This flatbread takes almost no time to get ready. You just grab your eggs and cottage cheese, blend them together, and pour the batter onto a baking sheet.
In less than five minutes of active work, you’re all set- and the oven does the rest. Perfect for days when you’re busy or just don’t feel like spending ages in the kitchen.
Minimal Ingredients: With only two main ingredients, this recipe keeps things simple. There’s no need to hunt for special flours or spices.
If you want extra flavor, you can add a teaspoon of Italian seasoning, but that’s totally optional.
High in Protein: Eggs and cottage cheese both pack a big protein punch. Each serving helps you hit your daily protein goals without extra effort.

👨🍳 How To Make
Follow this easy recipe:
Step 1
Preheat the oven to 350 °F.
Step 2
Add all the ingredients to a blender and blend until smooth, about 30 seconds.
Step 3
Line a baking sheet with parchment paper.
Step 4
Pour the mixture onto the lined sheet, spreading it evenly and thinly.
Step 5
Bake for 25–30 minutes. Remove from the oven, then use a pizza cutter to trim it into a round shape. Enjoy!
💡Tips
1. Preheat Your Oven Properly
Make sure your oven reaches 350 °F before you put the flatbread in. If the oven isn’t hot enough, the batter can spread too much and won’t rise or set right.
Use an oven thermometer if you have one- many ovens run cooler or hotter than the number says. Give your oven at least 10 minutes after it clicks “preheat” to actually hit the right temperature.
2. Blend Until Perfectly Smooth
Pour the eggs and cottage cheese into your blender or food processor and blend for about 30 seconds.
Stop and scrape down the sides, then blend another 10 seconds. You want no lumps of cheese or streaks of egg white. A silky batter means your flatbread will bake evenly without patches of undercooked cheese.
3. Spread the Batter Evenly
After you pour the batter onto the lined sheet, use a spatula to spread it in one smooth motion. Aim for an even thickness – so the whole flatbread bakes at the same rate. If some spots are thicker, they’ll stay undercooked, and thinner edges will overbrown.

FAQ
What if I don’t have a blender?
If you don’t have a blender, you can whisk the eggs and cottage cheese by hand. Use a sturdy whisk or fork and beat well for at least two minutes until the mixture looks smooth.
