1. Preheat Your Oven Properly

Use an oven thermometer if you have one- many ovens run cooler or hotter than the number says. Give your oven at least 10 minutes after it clicks “preheat” to actually hit the right temperature.

2. Blend Until Perfectly Smooth

Pour the eggs and cottage cheese into your blender or food processor and blend for about 30 seconds.

Stop and scrape down the sides, then blend another 10 seconds. You want no lumps of cheese or streaks of egg white. A silky batter means your flatbread will bake evenly without patches of undercooked cheese.

3. Spread the Batter Evenly

    As energy prices are so expensive now, ( & i’m also very old, disabled & on a very low Income LOL )
    I cooked these in my frypan, to save turning on the oven…they were fab,

    I get so excited whenever I find one of those on your site…keep em’ coming Richard.
    I eat Carnivore & Keto all the time, as I have type 2 Diabetes, & those two ways of eating between them, means I never have to take any drugs for the condition whatsoever ! ( Nor for anything else for that matter ) Quite an achievement for an 82 year old !

        I cooked them very gently. in a greased pan,which
        had a little bacon fat left in the base,
        with kerrygold butter
        They really were delicious, & I’ve made them several times since then.
