      💡Tips

      1. Don’t Overmix the Meatball Mixture

When combining the ground chicken, pork rinds, Parmesan cheese, egg, and seasonings, mix the ingredients just until they are evenly distributed. Use your hands to gently mix the ingredients until they come together, being careful not to compress the mixture too much.

      2. Use a Food Processor to Grind the Pork Rinds

To ensure that the pork rinds are evenly ground and the right consistency, use a food processor to pulse them into a fine crumb (or simply use the crumbs I linked to) . This will help the pork rinds mix easily with the other ingredients and create a more cohesive meatball mixture.

If you don’t have a food processor, you can place the pork rinds in a resealable bag and crush them with a rolling pin.

Made these last night. I left the garlic out and used dried, minced onion. Mine had to bake longer but they turned out very nice. Next time I’m going to try adding Italian seasoning to them. 2 thumbs up y’all.
