These are carnivore candied bacon cheese sticks, and they are honestly so good. The idea is simple.

You take mozzarella cheese sticks, wrap them in bacon, coat them in a brown sweetener, and then fry them in beef tallow until everything gets crispy and caramelized.

The result is a snack that has that perfect mix of salty, sweet, and cheesy all in one bite. I know it might sound like a lot going on, but trust me, once you try these, you will understand why I keep coming back to this recipe.

Note :The brown sweetener I use here is not something that is typically part of the strict carnivore diet. I want to be honest about that. This recipe is meant to be a treat, something you enjoy every once in a while, not something you eat every day.

  • 6 mozzarella Cheese Sticks
  • 6 slices Bacon (thin)
  • 4 tablespoons Brown Sweetener (like Swerve Brown or Golden Monkfruit – amazon links)
  • 5 tablespoons Beef Tallow

Follow this easy recipe:

Step 1

Place the mozzarella sticks in the freezer overnight. This keeps them from melting too quickly when frying. Frozen cheese = crispy bacon without a gooey mess!

Step 2

Take each frozen cheese stick and wrap one slice of bacon around it in a spiral, starting at one end and working to the other. Use a toothpick to secure the ends if the bacon won’t stay put.

Step 3

Spread the brown sweetener on a plate. Roll each bacon-wrapped stick in the sweetener, pressing gently so it sticks to the bacon.

Step 4

Melt the beef tallow in a skillet over medium heat until shimmering and hot.

Step 5

Carefully place the sticks in the hot tallow. Fry for 2-3 minutes per side, turning as each side turns golden and crispy.

💡Tips

1. Freeze the Cheese Sticks Overnight

This is probably the most important tip I can give you for this recipe. You absolutely need to freeze your mozzarella cheese sticks before you start cooking.

Put them in the freezer the night before you plan to make this recipe. Do not skip this step and do not try to rush it by just putting them in for an hour or two.

Bacon Cheese Sticks

They need to be frozen solid all the way through. The reason this matters so much is because mozzarella cheese melts at a pretty low temperature. When you put these in hot beef tallow to fry, the heat is intense.

If the cheese is just cold from the fridge, it will start melting almost immediately. The bacon won’t have enough time to get crispy before the cheese turns into a gooey puddle that leaks out everywhere. 

2. Don’t Crowd the Pan

When you’re frying these bacon cheese sticks, give them enough space in the pan. Don’t try to cook all six at once unless you have a really big skillet.

Crowding the pan causes a few problems. First, it drops the temperature of the tallow when you add too much cold food at once. This means things won’t cook as evenly and you might not get that nice crispy result.

Second, when the sticks are too close together, you can’t flip them easily. They bump into each other and it becomes hard to turn them without making a mess.

Third, they can stick to each other as the cheese starts to melt and the sweetener caramelizes. 

FAQ

Can I bake these in the oven instead of frying?

You can bake them, but they won’t turn out quite the same as when you fry them. Frying in beef tallow gives you that really crispy, evenly browned bacon with a nice caramelized sweetener coating.
