Place the mozzarella sticks in the freezer overnight. This keeps them from melting too quickly when frying. Frozen cheese = crispy bacon without a gooey mess!
Take each frozen cheese stick and wrap one slice of bacon around it in a spiral, starting at one end and working to the other. Use a toothpick to secure the ends if the bacon won’t stay put.
Spread the brown sweetener on a plate. Roll each bacon-wrapped stick in the sweetener, pressing gently so it sticks to the bacon.
Melt the beef tallow in a skillet over medium heat until shimmering and hot.
Carefully place the sticks in the hot tallow. Fry for 2-3 minutes per side, turning as each side turns golden and crispy.
