1. Watch That Heat!
Keep the heat on medium-low or low throughout the entire cooking process. High heat is the number one enemy of this sauce – it can make the cream separate and the cheese clump up instead of melting smoothly.
If you see any bubbling happening, lower the heat right away. The sauce should only gently simmer, never boil.
Think of it like this: you want to see tiny bubbles around the edges of the pan, similar to when you’re warming up milk for hot chocolate.
If you see big bubbles or the sauce is making popping sounds, that’s too hot.
2. Whisking The Sauce
