  • 3 Eggs (large, divided)
  • 2 cups Shredded Mozzarella Cheese 
  • 1 1/2 cups Almond Flour (I recommend this one – amazon)
  • Optional: 3/4 teaspoon Baking Powder

Step 1

Start by preheating the oven to 350°F and lining a large baking sheet with parchment paper.

Step 2

Add the shredded mozzarella cheese and cream cheese to a large microwave-safe bowl. Microwave until the cheese is mostly melted. Remove from the microwave and whisk well until the mixture is smooth. Set aside for 5 minutes.

Add in the almond flour and two of the eggs (also add baking powder if using). Mix well until the dough is formed.

Form 10 balls of dough and place them on the lined baking sheet.

Step 5

Whisk the remaining egg and use a pastry brush to brush the egg wash onto the rolls.

Step 6

Bake the rolls for 20-25 minutes or until they are golden brown on the outside. Enjoy!

2. Use Wet Hands When Shaping the Rolls

The dough for these rolls can be a bit sticky. To make it easier to handle, wet your hands with a little water before shaping each roll.

This prevents the dough from sticking to your hands and helps you form smooth, even balls.

You don’t need a lot of water – just enough to dampen your palms. If the dough starts sticking again as you work, just rewet your hands. This simple trick makes the shaping process much easier and faster.

Can I use coconut flour instead of almond flour?

No, coconut flour won’t work as a direct substitute in this recipe. Coconut flour absorbs much more moisture than almond flour – about 3-4 times more!

If you need to use coconut flour, you’d need to completely change the recipe with different amounts of eggs and cheese.

How do I know when they’re fully baked?

The rolls should be golden brown on the outside and feel firm when gently pressed. If you’re unsure, you can carefully lift one roll and check the bottom – it should be golden brown too, not pale.
