Pancakes on a keto diet? It sounds too good to be true. But it’s not. These pancakes are the real deal.
They’re low in carbs, high in protein, and taste great. I’ve been making these for a while now, and they’ve become a regular part of my breakfast rotation.
What’s great about this recipe is that it’s simple. You don’t need a lot of fancy ingredients or complicated steps. Just a few things you probably already have in your kitchen, and you’re set.
These pancakes are perfect for busy mornings when you want something filling but don’t have a lot of time. They’re also a good option if you’re tired of eggs and bacon every day.
Don’t get me wrong, I love eggs and bacon, but sometimes you need a change. That’s where these pancakes come in.
They give you that familiar pancake experience without the carbs. So, let’s get into this recipe and see how easy it is to make these keto cottage cheese pancakes.
👍 Why You’ll Love This Recipe
High In Protein – Thanks to the eggs and cottage cheese, these pancakes are packed with protein.
This is good because protein helps keep you feeling full for longer. You won’t be hungry an hour after eating these like you might be with regular pancakes.
Versatile – These pancakes are great on their own, but you can also add toppings or mix-ins to change things up. You can try adding some berries, nuts, or sugar free syrup.
This means you can have them often without getting bored. It’s like having a different breakfast each time. AMAZING!
Easy To Make – These keto cottage cheese pancakes are really simple to prepare. Just mix the ingredients, cook them in a pan, and you’re done.
It’s a great recipe for busy mornings or when you don’t feel like spending a lot of time in the kitchen.

💡Tips
1. Experiment with Flavors
While these pancakes are delicious, don’t be afraid to experiment with different flavors. You can add a teaspoon of vanilla extract for a classic pancake flavor, or try adding some cinnamon or nutmeg for a warm, spicy note.
For a savory version, you could omit the sweetener and add some herbs like chives or basil, and a bit of grated Parmesan cheese.
If you want to add berries, be sure to use them sparingly to keep the carb count low, and add them directly to the pancakes in the pan rather than mixing them into the batter.
2. Control Cooking Temperature
If your pan is too hot, the outsides will burn before the insides are cooked. Too cool, and your pancakes will take too long to cook and may end up dense. Start with medium heat and adjust as needed.
A good way to test if your pan is ready is to sprinkle a few drops of water on it. If the water sizzles and evaporates quickly, your pan is at the right temperature.
Keep in mind that your pan will continue to heat up as you cook, so you may need to lower the heat slightly after the first batch.

FAQ
1. My pancakes are falling apart when I flip them. What am I doing wrong?
This usually happens when you try to flip the pancakes too early. Wait until you see bubbles forming on the surface and the edges starting to look dry.
Also, make sure your pan is at medium heat, not too hot. If the heat is too high, the outside will cook too fast while the inside stays raw, making them fall apart when flipped.
2. Can I make the batter ahead of time?
Yes, you can make the batter up to 24 hours ahead and store it in an airtight container in the refrigerator. Just give it a good stir before using, as the ingredients might separate.
However, the pancakes taste best when made with fresh batter, as the baking powder starts working as soon as it gets wet.
3. The pancakes are sticking to my pan.
Make sure your pan is well greased and properly preheated before adding the batter. Non-stick pans work best, but any pan will work if you use enough butter or cooking spray.
Also, wait until the pancakes are ready to flip – if they’re sticking, they probably need to cook longer.
