Step 1
Heat the milk with cocoa powder, instant coffee, heavy whipping cream, and vanilla on low heat. It’s important to avoid scorching. Continue stirring until the mixture is well mixed.
Step 2
Remove from the heat and let it cool for 25 minutes.
Step 3
Blend the mascarpone cheese in a blender. Add the milk mixture and mix well to combine.
Step 4

1. Keep The Heat Low When Warming The Milk
When you’re heating the milk mixture on the stove, make sure your burner is set to low heat. This is really important because milk can burn very easily, and if it does, your whole batch will taste burnt and you’ll have to throw it away.
Burnt milk has a very strong, unpleasant taste that you can’t fix. So keep the temperature low and be patient. It might take a few extra minutes, but it’s worth it.
While the mixture is heating, stay near the stove and stir it constantly with a spoon or whisk. Don’t walk away to check your phone or do something else. The constant stirring prevents the milk from sticking to the bottom of the pot where it’s most likely to burn.

2. Let The Mixture Cool Completely Before Blending
After you take the milk mixture off the heat, you need to let it cool down for at least 25 minutes like the recipe says.
If you add hot liquid to the mascarpone cheese and blend it right away, the heat can cause the mascarpone to separate or get a weird grainy texture instead of staying smooth and creamy. The mascarpone needs to stay at a cooler temperature to blend properly.
You can speed up the cooling process by pouring the mixture into a bowl and placing that bowl in the refrigerator, or you can set it on the counter and stir it occasionally to help release the heat.

3. Fill The Molds Almost To The Top
When you’re pouring the mixture into your popsicle molds, fill them up close to the top but leave just a tiny bit of space.
Liquids expand a little when they freeze, so if you fill them completely to the very top, the mixture might overflow slightly and make a mess in your freezer.
But you also don’t want to leave too much empty space because then your popsicles will be small and you’ll have leftover mixture with nowhere to put it. Aim to fill each mold to about 90% full.
