      Follow this easy recipe:

      Step 1

      Start by preheating the oven to 350°F and lining a baking dish (I used a 10×13 inch one) with parchment paper.

      Step 2

      Grease the paper to prevent the crust from sticking.

      Step 3

      Add the eggs, cottage cheese, and seasonings (if using) to a blender. Process until smooth.

      Step 4

      Pour the mixture into the prepared baking dish and spread it evenly.

      Bake in the oven for 35 minutes. During baking, the mixture will rise and inflate like a souffle – this is normal.

      Step 6

      Remove from the oven and carefully flip the entire crust onto a clean baking sheet lined with parchment paper (the bottom side that was against the pan will now be facing up). Let it rest for 10 minutes – during this time, it will deflate and flatten.

      Then you can add your toppings (I use pepperoni and mozzarella cheese) and return to the oven for 10 more minutes – until the cheese is melted and bubbly. Enjoy!

      1. Watch The Blending Time

      When blending the cottage cheese and eggs, blend until the mixture is completely smooth with no cottage cheese lumps remaining. It took me about 15 seconds. Stop and scrape down the sides of the blender if needed.

      But be careful not to over-blend – if you blend too long, you’ll incorporate too much air into the mixture, which can cause your crust to puff up unevenly in the oven and then collapse.

      2. Line And Grease 

      Don’t skip the parchment paper step, and make sure it covers the entire bottom of the pan with some overhang on the sides.

      The overhang helps you lift the pizza out easily once it’s done. After lining, grease the paper well – even if you’re using non stick parchment.
