Instructions
Start by preheating the oven to 350°F and lining a baking dish (I used a 10×13 inch one) with parchment paper.
Grease the paper to prevent the crust from sticking.
Add the eggs, cottage cheese, and seasonings (if using) to a blender. Process until smooth.
Pour the mixture into the prepared baking dish and spread it evenly.
Bake in the oven for 35 minutes. During baking, the mixture will rise and inflate like a souffle – this is normal.
Remove from the oven and carefully flip the entire crust onto a clean baking sheet lined with parchment paper (the bottom side that was against the pan will now be facing up). Let it rest for 10 minutes – during this time, it will deflate and flatten.Then you can add your toppings (I use pepperoni and mozzarella cheese) and return to the oven for 10 more minutes – until the cheese is melted and bubbly. Enjoy!
