Brown butter is one of those things that makes everything taste better. It has a rich, nutty flavor that’s completely different from regular butter.

And the good news is that making brown butter at home is actually very simple. You just need butter and a pan. That’s all.
Today I’m showing you how to make keto whipped brown butter bites. These are small portions of brown butter that you can keep in your fridge and use whenever you want.
They’re perfect for the keto diet because butter is already keto friendly and has zero carbs.

Making brown butter does require a bit of attention because you need to watch it carefully so it doesn’t burn. But once you get the hang of it, it becomes second nature.
The whole process takes about ten to fifteen minutes, and most of that time you’re just standing there stirring and watching. Let’s get started!

💡Tips
1. Watch the Color Carefully
The most important thing when making brown butter is watching it closely as it cooks. Butter can go from perfectly browned to burnt in just a few seconds, and burnt butter tastes bitter and ruins the whole batch.
What you want to look for is a golden brown color, not dark brown or black. The butter will start out yellow when it melts, then it will get lighter and foamy, and then slowly the color will deepen to a light brown.

Keep stirring the whole time so you can see the bottom of the pan. The brown bits that form at the bottom are what you’re aiming for. They should look like little specks of tan or light brown, not black.
If you see any black bits forming, that means it’s starting to burn and you need to take it off the heat immediately. The smell is also a good indicator.
Brown butter should smell nutty and toasted, kind of like roasted nuts or popcorn. If it starts to smell sharp or acrid, it’s burning.
2. Scrape Every Last Bit from the Pan
When you pour the brown butter out of the pan and into your glass container, make sure you scrape out every single bit of the browned milk solids from the bottom of the pan.
Those brown bits are where most of the flavor is. They’re the whole reason brown butter tastes so good. Use a rubber spatula or a silicone spatula to scrape the bottom and sides of the pan completely.

You want to get all those little brown specks out. Some of them might be stuck to the pan, so really scrape well. Don’t just pour the liquid butter out and leave the solids behind. Those solids are gold.
When you scrape them all out and mix them into your butter, they’ll be distributed throughout all your butter bites. This means every single bite will have that full brown butter flavor.

FAQ
Can I use salted butter instead of unsalted?
You can use salted butter if that’s all you have, but unsalted butter works much better for this recipe. The problem with salted butter is that the salt can burn during the browning process and create a bitter taste.
