1. Let the Cream Cheese Soften First
Before you start making these crepes, take the cream cheese out of the fridge and let it sit on the counter for about 15-20 minutes.
Cold cream cheese is hard and doesn’t blend well with the eggs. When you try to blend cold cream cheese, you end up with little chunks in your batter instead of a smooth mixture.
These chunks won’t disappear when you cook the crepes, and you’ll see white spots throughout. If you forget to take it out early, you can soften it quickly by cutting the cream cheese into small cubes – smaller pieces warm up faster than one big block.
Another trick is to microwave it for about 10-15 seconds, but be careful not to melt it completely.
2. Blend Until Completely Smooth
When you’re blending the eggs and cream cheese together, don’t stop after just a few seconds. Keep blending for at least 30-45 seconds to make sure everything is completely mixed together with no lumps at all.
