Today I’m going to show you how to make keto cream cheese bread. This is one of my favorite keto bread recipes because it’s so easy and it actually tastes like real bread.

The best thing about this recipe is how simple it is. You only need four ingredients – cream cheese, eggs, butter, and vanilla extract.

Follow this easy recipe:

Step 1

Start by preheating the oven to 350°F (175°C).

Step 2

Add all the ingredients to a large mixing bowl.

Step 3

In a blender- blend all the ingredients together until they are  combined and the mixture is smooth and soft.

Step 4

Pour the mixture into a greased loaf pan.

Step 5

Bake for 40-45 minutes. You can insert a toothpick into the center and see if comes out clean. Enjoy!

1. Use Room Temperature Ingredients

Take your cream cheese, eggs, and butter out of the refrigerator about 30 minutes before you start making this bread.

When these ingredients are at room temperature, they blend together much more smoothly and evenly. Cold cream cheese is hard and chunky, which makes it difficult for the blender to mix it properly with the other ingredients.

You might end up with lumps of cream cheese in your batter if everything is too cold. Cold eggs don’t combine as well either, and cold butter won’t blend smoothly.

When everything is room temperature, the blender can mix it all into a smooth, uniform batter in just a minute or two.

2. Grease Your Pan Really Well

This is super important and a lot of people don’t do it well enough. You need to grease your loaf pan thoroughly with butter, coconut oil, or cooking spray.

Make sure you get every corner and the edges where the sides meet the bottom. If you don’t grease it well, the bread will stick to the pan and you’ll have a hard time getting it out in one piece.

Use more grease than you think you need – it’s better to use too much than too little. You can also line the bottom of the pan with parchment paper for extra insurance, but if you grease it really well, you shouldn’t need to. 

3. Let It Cool Completely Before Slicing

This is probably the hardest tip to follow because the bread smells so good when it comes out of the oven and you want to eat it right away. But you really need to wait.

When the bread first comes out of the oven, it’s still cooking a little bit inside and the structure hasn’t fully set yet. If you try to slice it while it’s still hot, it will fall apart or squish down and you’ll end up with a mess.

Let it cool in the pan for about 10-15 minutes first, then take it out of the pan and put it on a cooling rack. Let it sit until it’s completely cool to the touch – this usually takes another 30-45 minutes .

FAQ

Can I use a different extract instead of vanilla?

Yes, you can definitely use different extracts to change the flavor of this bread. Almond extract is a popular choice and gives the bread a nice nutty, sweet flavor.

You would use the same amount – one teaspoon. Lemon extract is another good option if you want a fresh, bright flavor.
