1. Use Thin Sliced Bacon, Not Thick Cut
When you go to the store to buy bacon for this recipe, make sure you pick up thin sliced bacon. Do not get thick cut bacon, even if you normally prefer it for breakfast.
There is a good reason for this. Thin bacon wraps around the cheese sticks much more easily. It is flexible and bends without breaking or tearing.
Remember, we are frying these for just 2 to 3 minutes per side. That is not a lot of time. Thin bacon will get perfectly crispy in that short amount of time. Thick bacon needs longer to cook through and get crispy.

2. Wrap the Bacon Tightly in a Spiral
How you wrap the bacon around the cheese stick matters a lot. You want to wrap it in a spiral pattern, starting at one end of the cheese stick and working your way to the other end.
