Double Cut Pork Chops Recipe ingredients
2/3 cup Salt
1/5 cup Sugar – We are using sugar only for the brine. The meat will not absorb much of it.
1 qt (1L) Hot Water
1/4 cup Chili Powder
2 tablespoons Salt
1 tablespoon Paprika
How To Prepare Double Cut Pork Chop?
We are going to brine, smoke, and then grill the double bone in pork chop. It takes some time, but it is worth the wait.
These will be the most flavorful, tender, and juicy pork chops you have ever eaten. Your guests will be raving about them, and you will be the hero of the day.
Step 1: Brine
Combine the brine ingredients in a bowl, add hot water and mix together well. Once everything is dissolved -a add cold water and ice to speed up the cooling process.
Once the brine has cooled to room temperature, place the pork chops in a large baking dish and pour the brine over them covering them entirely.
Leave in the refrigerator for 1-6 hours. The longer, the better. I recommend 6 hours.
Step 2: Heating The Smoker
Start the smoker, at a temperature of 225F (110C). Place the double cut pork chop in the smoker for about 2 hours.
Once they reach an internal temperature of 145F (63C), remove from the smoker.
Step 3: Grilling
Now turn up the heat on your smoker to high and put the pork chops back on. You can also move the chops to a grill.
Sprinkle the double smoked pork chops with the run and grill for about 2 minutes on each side. I recommend grilling the sides as well for 30 seconds.

Can You Skip The Brining Step?
We are brining the double thick pork chops in order to make them juicy and tender. The chops will absorb the liquids.
You can skip this part, but the chops will not be as juicy. Don’t be lazy. Brining, smoking, and grilling may take some time, but the result is definitely worth it!

Are Smoked Double Cut Pork Chops Keto Friendly?
Yes. We use sugar for the brine, but not much of it is absorbed. For the rub- we do not use any sugar.

How Long To Grill Double Cut Pork Chops?
Since we brine and smoke the chops before grilling, the actual grilling time will be much shorter. We recommend grilling over high heat for about 2 minutes per side.
Some people like their meat cooked very-well-done, but we find that grilling the chops for a shorter amount of time results in juicier, more flavorful meat.
Sous Vide Double Cut Pork Chop
It’s also possible to sous vide a double cut pork chop, instead of grilling it. But I recommend still using a brine, and smoking it prior to cooking it in the
sous vide water bath.
Double Cut Pork Chop Oven Option
If you don’t want to grill the chops, you can prepare them in the oven. Set the highest oven temperature, and turn on the fan. Cook them for a few minutes until they are nicely browned on both sides.

- Combine the brine ingredients in a bowl, add hot water and mix. When dissolved - add cold water to bring everything to room temeprature faster.Place the pork chops in a large baking dish and pour the brine over - covering entirely.Leave in the refrigerator for 1-6 hours (the longer the better)
- Start your smoker at a temperature of 225F (110C). Smoke the chops for about 2 hours - up to internal temperature of 145F (63C).
- Grill the chops for 2 minutes on each side.
