  • 6 slices Bacon (thin)

  • 5 tablespoons Beef Tallow

Follow this easy recipe:

Step 1

Freeze the mozzarella sticks in the freezer overnight. This keeps them from melting too quickly when frying. 

Step 2

Take each frozen cheese stick and wrap one slice of bacon around it in a spiral, starting at one end and working to the other. 

Step 3

Spread the brown sweetener on a plate and roll each bacon wrapped stick in the sweetener, pressing gently so it sticks to the bacon.

Step 4

Melt the beef tallow in a skillet over medium heat until hot.

Step 5

Place the sticks in the hot tallow – be careful. Fry for 2-3 minutes per side, turning as each side turns golden and crispy.

1. Use Thin Sliced Bacon, Not Thick Cut

When you go to the store to buy bacon for this recipe, make sure you pick up thin sliced bacon. Do not get thick cut bacon, even if you normally prefer it for breakfast.

There is a good reason for this. Thin bacon wraps around the cheese sticks much more easily. It is flexible and bends without breaking or tearing.

Remember, we are frying these for just 2 to 3 minutes per side. That is not a lot of time. Thin bacon will get perfectly crispy in that short amount of time. Thick bacon needs longer to cook through and get crispy.

2. Wrap the Bacon Tightly in a Spiral

How you wrap the bacon around the cheese stick matters a lot. You want to wrap it in a spiral pattern, starting at one end of the cheese stick and working your way to the other end.

Start by placing the end of the bacon slice at one tip of the cheese stick. Press it down so it sticks. Then wrap the bacon around at an angle, going down the cheese stick in a spiral.

Each wrap should overlap the previous one just a little bit. This overlap is important because it helps keep the bacon in place and makes sure there are no gaps where cheese could leak out.

3. Press the Sweetener Onto the Bacon

When you roll the bacon wrapped cheese sticks in the brown sweetener, do not just lightly roll them and call it done. You need to actually press the sweetener into the bacon.

Put your sweetener on a plate and spread it out. Then take your bacon wrapped stick and roll it in the sweetener.

As you roll, use your fingers to gently press the sweetener into the bacon. The bacon has a slightly sticky surface that the sweetener will cling to, but pressing helps make sure you get a good coating.
