  • 1/2 pound Ground Beef
  • 1 pound Ground Pork 
  • 1/2 cup Colby Jack Cheese (grated)
  • 1/2 cup Monterey Jack Cheese (grated)
  • 1 teaspoon Xanthan Gum (I only use this xanthan gum – Amazon link)
  • 3/4 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Italian Seasoning Blend
  • 1/2 teaspoon Garlic Powder
  • 1/2 Onion Powder 
  • For Topping: 1/4 cup Parmesan Cheese (grated) + 1/4 cup Mozzarella Cheese (grated)

Follow this easy recipe:

Step 1

Start by preheating the oven to 350°F and lining a 9×13-inch casserole dish with parchment paper.

Step 2

In a large bowl, combine these ingredients: ground pork, ground beef, pepper, salt, Italian seasoning, onion powder, garlic powder, xanthan gum, and Colby Jack and Monterey Jack cheeses. Mix until well combined.

Step 3

Spread the mixture evenly in the bottom of the casserole dish.

Step 4

Bake at 350°F for 20-25 minutes until the meat is fully cooked.

Step 5

Remove from the oven and drain the excess oil. Top with 1/4 cup of Parmesan cheese and mozzarella, as well as pepperoni, and bake for 5 more minutes.

💡Tips

1. Spread It Evenly in the Pan

When you spread the meat mixture in the casserole dish, take your time to make sure it’s even thickness all the way across.

If some parts are thicker than others, those thick spots will take longer to cook and might still be raw when the thinner parts are already done.

Use your hands or the back of a large spoon to press the meat down firmly and spread it into all the corners of the dish. You want it to be flat and smooth on top, with no bumps or low spots.

2. Watch the Baking Time Carefully

The recipe says 20-25 minutes for the initial baking, but your actual time might vary depending on your oven and how thick you spread the meat. Start checking at 20 minutes to see how it’s doing.

The meat should be completely browned on top with no pink spots, and when you press on it gently with a spatula, it should feel firm, not squishy. If you see any areas that still look pink or raw, give it another 5 minutes and check again.

It’s important that the meat is fully cooked before you add the cheese topping, because you’re only giving it 5 more minutes after that, which isn’t enough time to finish cooking raw meat.

3. Drain the Oil Well

After the meat finishes its first baking time, there will be quite a bit of oil and liquid in the bottom of the pan.

You need to drain this off before adding the cheese topping, or your pizza will be swimming in grease.

The easiest way to do this is to carefully tilt the pan to one side and let the oil pool in a corner, then use a spoon to scoop it out into a bowl or measuring cup. 

FAQ

What can I use instead of xanthan gum?

Xanthan gum is really important in this recipe because it acts as a binder that holds the meat and cheese together. Without it, the pizza might fall apart when you try to cut and serve it.

If you don’t have xanthan gum and can’t get it, you could try using an egg instead.
