Follow this easy recipe:

Step 1

Place a pan over medium heat. Add the butter and allow it to melt. Once melted, lower the temperature to medium-low, Wait for the butter to start foaming.

Step 2

Continue stirring and scrape the sides often.

Step 3

Wait for the butter to brown to the desired level, then remove it from the heat and allow it to cool for 5 minutes.

Step 4

Pour the butter from the pan into a very large glass cup. Scrape all the pieces from the pan  (those are the tasty bits!).

Step 5

Place the glass cup in the fridge for 15 minutes. Whip the butter using a hand mixer until creamy.

Then, fill silicone molds with the butter and place them in the fridge for an hour.

1. Watch the Color Carefully

The most important thing when making brown butter is watching it closely as it cooks. Butter can go from perfectly browned to burnt in just a few seconds, and burnt butter tastes bitter and ruins the whole batch.

What you want to look for is a golden brown color, not dark brown or black. The butter will start out yellow when it melts, then it will get lighter and foamy, and then slowly the color will deepen to a light brown.

Keep stirring the whole time so you can see the bottom of the pan. The brown bits that form at the bottom are what you’re aiming for. They should look like little specks of tan or light brown, not black.

If you see any black bits forming, that means it’s starting to burn and you need to take it off the heat immediately. The smell is also a good indicator.
