Keto Chicken & Bacon Casserole

This keto chicken and bacon casserole is one of those recipes that makes meal prep really simple.

Keto Chicken & Bacon Casserole

It combines cooked chicken with crispy bacon, melted cheddar cheese, and a creamy egg mixture that holds everything together.

The result is a satisfying main dish that works great for lunch or dinner. You can make it ahead of time and reheat portions throughout the week, which is helpful when you’re busy and don’t want to cook every single day.

What makes this recipe work well for keto is that it’s high in protein and fat while being very low in carbs.

Keto Chicken & Bacon Casserole Recipe

The chicken gives you plenty of protein, the bacon and cheese add fat and flavor, and the cream and mayo make it rich without adding any carbs.

The cooking process is easy too. You layer the ingredients in a baking dish, pour the egg mixture over everything, and bake it in the oven. That’s basically it.

👍 Why You’ll Love This Recipe

Perfect for Leftover Chicken: If you have cooked chicken sitting in your fridge and you’re not sure what to do with it, this casserole is the answer.

Instead of eating plain reheated chicken for the third day in a row, you can turn it into something completely different.

Bacon Makes Everything Better: Let’s be honest, bacon improves almost any dish, and this casserole is no exception. The bacon adds a salty, smoky flavor that makes the whole thing taste more interesting.

One-Dish Wonder: You don’t need to cook three different things on the stove and wash a bunch of pots and pans with this recipe. Everything goes into one baking dish and cooks together in the oven.

✨ Recipe Ingredients

  • Chopped Cooked Chicken: The main protein base for this casserole.
  • Eggs: The eggs are used to bind the ingredients together and add richness.
  • Bacon: Adds a wonderful salty flavor and satisfying texture.
  • Cheddar Cheese: Beautifuly Melts in to add great flavor and gooeyness (this cheese is excellent- amazon link).
  • Mayo: Adds creaminess and moisture, you can use store bought or my carnivore mayo recipe (it’s really easy).
  • Heavy Cream: The heavy cream adds richness and helps create the smooth consistency.
  • Optional Spices (Black Pepper, Garlic Powder, Onion Powder, Paprika): These add extra layers of flavor.

👨‍🍳 How To Make

Follow this easy recipe:

Step 1

Start by preheating the oven to 375°F and spraying a 9×13 inch (or a similar one) pan with cooking spray (you can also use melted butter).

Step 2

Spread the cooked and shredded chicken, along with the cooked bacon, in the bottom of the pan. Then, top with shredded cheddar cheese.

Step 3

Whisk together the eggs, mayonnaise, seasonings, and heavy cream in a bowl.

Step 4

Pour the mixture on top of the chicken mixture. I recommend adding more chopped bacon and cheese on top, as well shredded chicken (optional).

Step 5

Bake it uncovered for 30-35 minutes. Yummy!

💡Tips

1. Whisk the Egg Mixture Really Well

When you mix together the eggs, mayo, heavy cream, and seasonings, you need to whisk everything until it’s completely smooth and combined. If you don’t mix it well enough, you might get chunks of mayo or uneven seasoning in your casserole.

Low Carb Keto Chicken & Bacon Casserole

Use a regular whisk and spend a good minute or two mixing everything together. The mixture should look smooth and unified, not separated or lumpy. This egg mixture is what holds the whole casserole together, so getting it right matters.

If you see any mayo clumps, keep whisking until they break up and blend in. The heavy cream and eggs should be fully incorporated so that when you pour it over the chicken and bacon, it distributes evenly throughout the pan.

2. Layer Everything Evenly

When you spread the chicken, bacon, and cheese in the baking dish, try to distribute everything evenly across the whole pan.

Low Carb Chicken & Bacon Casserole

If you dump all the chicken in one corner and all the bacon in another, some pieces of your casserole will be mostly chicken while others will be mostly bacon. That’s not ideal because every portion should have a good mix of all the ingredients.

3. Check for Doneness in the Center

The casserole is done when the egg mixture is fully set and not jiggly anymore. After 30 minutes, open the oven and gently shake the pan a little.

If the center still wobbles like liquid, it needs more time. If it’s mostly firm with just a tiny bit of jiggle, it’s done or very close.

You can also insert a knife into the center – if it comes out clean without wet egg mixture on it, the casserole is ready. Different ovens heat differently, so your casserole might take 30 minutes or it might need the full 35 minutes or even a couple minutes more.

FAQ

Can I make this casserole ahead of time?

Absolutely, and this is actually one of the best things about this recipe. You can prepare the entire casserole, cover it tightly with plastic wrap or aluminum foil, and keep it in the fridge for up to 24 hours before baking.

What can I substitute for mayonnaise?

If you don’t like mayo or don’t have any, you can use sour cream or Greek yogurt instead, but keep in mind that Greek yogurt will add a few more carbs. Sour cream works really well and gives you almost the same creamy texture as mayo.

Do I need to cover the casserole while it bakes?

No, the recipe says to bake it uncovered, and that’s the best way to do it. Baking it uncovered lets the top get a little golden and lets any excess moisture evaporate so your casserole doesn’t end up watery.
