💡Tips
1. Drain Watery Cottage Cheese
Cottage cheese brands can be very different from one another. Some are thick and creamy, while others have a lot of liquid milk or water sitting at the bottom of the container.

If your cottage cheese looks very runny or watery, try to drain that extra liquid before you mix it with the other ingredients. You can do this by just tipping the container carefully or scooping the cheese out with a slotted spoon.
If there is too much water in your mixture, the fries will not crisp up properly in the oven. They will stay soft and soggy because the oven has to work too hard to evaporate all that extra liquid.
2. Spacing is Key
When you are shaping the mixture into fries on the baking tray, make sure you leave a little bit of empty space between each one.

If you put them too close together or let them touch, they will steam each other instead of baking. We want the hot air in the oven to circulate all around the sides of each fry.
This airflow is what makes the outside edges crispy and delicious. If they are all touched together in one big lump, you will end up with a flat cheese casserole instead of individual fries, and they won’t have that nice crunch you are looking for.

I do not recommend freezing these fries. Cheese that has been melted and baked usually changes texture when it is frozen and then thawed. It can become grainy or separate into water and oil.
