Step 2

In a bowl, combine all ingredients except for 1/2 cup of pork panko (set it aside in a shallow bowl) . Mix until well combined.

Form the mixture into 1 to 2 inch sausage balls.

Step 4

Roll each sausage ball in the remaining 1/2 cup of pork panko that was set aside.

1. Don’t Skip the Soaking Step

When you mix the pork panko with the other ingredients, it needs time to absorb the milk. This is important because dry panko won’t bind properly and your sausage balls might fall apart.

After you combine everything except that reserved half cup of panko, let the mixture sit for about 5 minutes before you start forming balls. During this time, the panko soaks up the milk and becomes softer, which helps everything stick together better.

If you rush this step and start forming balls immediately, you’ll notice the mixture is harder to work with and doesn’t hold its shape as well.

2. Keep Your Hands Slightly Damp

Rolling the sausage mixture into balls can get messy, and the mixture tends to stick to your hands. Keep a small bowl of water nearby while you’re forming the balls. Dampen your hands slightly before rolling each ball – not dripping wet, just lightly moist.

This prevents the meat mixture from sticking to your palms and makes it much easier to form smooth, round balls.

After every few balls, rinse your hands and dampen them again. If your hands get too sticky or covered in sausage residue, the balls won’t form as nicely and the coating won’t stick properly.
