1. Make Sure the Foil is Sealed Tight

When you cover the baking dish with aluminum foil, you need to make sure it’s sealed really well around all the edges. The whole point of covering it is to trap the moisture and steam inside so the brisket doesn’t dry out.

If there are gaps or loose spots in the foil, the steam will escape and your brisket won’t stay as moist. Press the foil down firmly around the edges of the dish, and if your foil isn’t wide enough to cover the whole dish in one piece, use two pieces and overlap them in the middle.

Some people even use two layers of foil to be extra safe. You want to create a tight seal that keeps all the moisture locked in during those three hours of cooking.

Before you start slicing, look closely at the surface of the brisket. You’ll see lines running in one direction – these are the muscle fibers, also called the grain. You want to cut perpendicular to these lines, not parallel to them.
