Place the brisket in a large baking dish. Season with salt and black pepper (you can also add more seasonings), rubbing the spices into all sides of the meat. Add the beef stock so it covers the meat.
Cover the dish tightly with aluminum foil, and make it’s well sealed to trap moisture during cooking.
Bake for about 3 hours.
Remove the foil and broil uncovered for 15 minutes to develop a delicious crust. Let the meat rest for 10 minutes before slicing (slice against the grain) – enjoy.
