  • 12 large Eggs
  • 2 cups shredded Cheddar Cheese
  • 3/4 cup Heavy Whipping Cream

  • Salt
  • Pepper
  • 2 tablespoons sliced Green Onions

Step 1

Start by preheating your oven to 350F / 175C and heating a large skillet over medium-high meat. Add the sausage and cook the meat until it’s fully cooked. Don’t overcook. Use a wooden spoon to break the meat apart while cooking.

Step 2

Spread the sausage over the bottom of the dish – I used a 9×13-inch glass casserole dish.

Step 3

Take a large bowl and whisk the eggs, heavy whipping cream, hot sauce, and shredded cheese. Evenly pour the mixture over the sausage.

Step 4

1. Don’t Overcook Your Sausage

When you’re browning the sausage in the skillet, cook it just until it’s no longer pink, then stop.

A lot of people make the mistake of cooking the meat too long because they want to make sure it’s done, but if you overcook it at this stage, it’s going to cook even more in the oven and end up dry and tough.

The sausage will continue cooking when the casserole bakes for 35-40 minutes, so you really just need to get it cooked through initially. Break it up into small pieces with your wooden spoon while it cooks so it browns evenly.

2. Whisk The Eggs Really Well

This might seem obvious, but you need to whisk the egg mixture thoroughly until everything is completely combined and smooth.

Don’t just stir it a few times and call it done. You want the eggs, heavy cream, hot sauce, and cheese to be fully mixed together with no streaks of egg white or clumps of cheese sitting at the bottom of the bowl.

This usually takes about a minute of good whisking. When everything is properly mixed, you’ll get an even texture throughout the whole casserole.

3. Let It Rest Before Cutting

Letting the casserole rest for 5-10 minutes after it comes out of the oven makes a huge difference.

When it’s fresh from the oven, the eggs are still really hot and haven’t fully set up yet. If you try to cut into it immediately, it will be loose and messy, and the pieces will fall apart or ooze liquid.

The eggs need a few minutes to firm up as they cool slightly. During this resting time, everything settles and binds together properly, so when you cut into it, you’ll get nice clean squares that hold their shape.
