  • 1 teaspoon Baking Powder
  • 2 tablespoons Psyllium Husk Powder
  • 1/2 teaspoon Xanthan Gum
  • 1 Egg White
  • 1 Egg
  • 2 tablespoons water

Pizza Topping

  • Pepperoni Slices
  • Feta Cheese Cubes
  • Shredded Mozzarella
  • Optional: Low Carb Pizza Sauce

Follow this easy recipe:

Step 1

Place the dry ingredients into a large mixing bowl and mix until well combined. Then, add in the water, egg and egg white and mix well. Place in the fridge for 10 minutes.

Step 2

Divide into 2 and shape each into a ball. Place each one between 2 parchment papers and use a rolling pin to roll it fairly thinly.

Step 3

Remove the top paper and use a saucepan lid or a small plate – 5 to 6 inches. Cut around. Repeat for the second ball of dough.

Step 4

Place a frying pan over medium heat. Add butter or coconut oil and cook each tortilla for 30-40 seconds per side. Repeat for the second tortilla.

Step 5

Top each tortilla with the pizza sauce (optional), cheese, pepperoni and feta. Microwave for 30 seconds or until the cheese melts. Enjoy!

1. Let the Dough Rest in the Fridge

Don’t skip the 10 minute fridge time – it’s really important for getting the right texture. When you first mix the dough, it might seem a bit sticky or hard to work with. That’s totally normal!

    Really good! I added some garlic powder to the tortillas before topping them. My only issue was they got a little soggy in the middle, but I think I overloaded the toppings.
