Place the dry ingredients into a large mixing bowl and mix until well combined. Then, add in the egg and egg white, as well as the water and mix well. Place in the fridge for 10 minutes.
Divide into 2 and shape each into a ball. Place each one between 2 parchment papers and use a rolling pin to roll it fairly thinly.
Remove the top paper and use a saucepan lid or a small plate – 5 to 6 inches. Cut around. Repeat for the second ball of dough.
Place a frying pan over medium heat. Add butter or coconut oil and cook each tortilla for 30-40 seconds per side. Repeat for the second tortilla.
Top each tortilla with the pizza sauce (optional), cheese, pepperoni and feta. Microwave for 30 seconds or until the cheese melts. Enjoy!
