Start by preheating the oven to 350°F and lining a loaf pan (I used a 9×5-inch one) with parchment paper.
Add the cottage cheese, egg, and egg whites to a blender. Blend until completely smooth.
Add the almond flour and baking powder to a large bowl. Mix well. Then pour in the cottage cheese mixture and mix until combined – take your time and do it by hand.
Pour the batter into the loaf pan and bake for 1 hour.
Remove the bread from the oven and let it cool for 1 hour before removing and cutting. Enjoy!
