Start by preheating the oven to 350°F and lining a muffin tin with muffin liners.
Add these ingredients to a medium mixing bowl: eggs, melted butter, egg whites, and vanilla extract. Using an electric mixer, mix on medium speed.
Add the monk fruit sweetener, cinnamon, coconut flour, cream of tartar, ginger, baking soda, and salt. Mix on medium speed and then increase to high.
Spoon the mixture into the muffin liners and then transfer the muffin tin to the oven.Bake for about 20 minutes. Insert a toothpick into the center of a muffin and check if it comes out clean to know if they’re ready.
To make the frosting, combine the sweetener with the other frosting ingredients. Once made, pipe the frosting onto the muffins and dust with cinnamon on top. Serve and enjoy!
