We will start by preparing the apples for the cake. Place them in a mixing bowl and add the lemon juice on top. Spread it across all the apples, and let them sit for a minute. Then, drain any excess.
Add the sweetener and mix everything together. Allow the apples to macerate for at least 25 minutes. Afterward, remove the excess liquid again.
Now let's continue and make the cake batter. Start by preheating the oven to 350°F and lining a glass baking pan (8x8 or 9x9) with parchment paper.
Add the eggs to a large mixing bowl. Use an electric mixer to beat them until fluffy and they increase in volume. It will take 2-3 minutes.
Add the melted butter (make sure it has already cooled), sweetener, almond milk, cream cheese, and vanilla. Beat for another minute.
In another bowl, mix the coconut flour, almond flour, baking powder, and cinnamon. Then, combine it with the wet ingredients and blend until the batter is smooth.
We will make the crumble topping now – it’s super easy. Mix all the crumble ingredients in a small separate bowl.
Add the chopped apples (leaving the sliced ones aside for now) to the cake batter, and then fill the baking pan. Place the apple slices on top. To finish, add the crumble mixture on top.
Bake in the oven for 1 hour. The best way to check if the cake is ready is to insert a skewer in the center. If it comes out clean, the cake is ready. Depending on your oven, it may take less time. I suggest checking after about 45 minutes.
