Place the cream cheese and eggs into a blender. If you are using vanilla, add it too.
Blend until smooth, and then let the batter rest.
Meanwhile, place a skillet or griddle over medium-high heat. Add butter and allow it to melt.
Start pouring about 2 tablespoons of the batter for each pancake.
Cook for a couple of minutes on each side until golden. Enjoy!
