Instructions
Lightly beat the egg whites in a medium bowl. Mix them and Parmesan cheese in a bowl until well combined. Form into small balls and place them on a parchment lined baking sheet.
Bake at 350°F for 5-6 minutes. The cheese will melt and spread out flat – this is normal.
Remove from oven and let cool for 5-10 minutes, until you can handle them but they’re still flexible. Squeeze and shape each back into a ball.
Return to oven for 5 more minutes or until lightly brown. The cheese will spread again slightly.
Let cool slightly, then squeeze and shape into balls one final time. Roll each ball in pork rind crumbs. Enjoy!
