3/4 cup Powdered Pork Rinds(I use these rinds - amazon link)
1 Egg (large)
1 3/4cups Shredded Mozzarella Cheese
2 1/2 tablespoons Butter
1/2teaspoon Salt
Instructions
Start by preheating your oven to 425F (220C). Place the mozzarella and butter in a microwave-safe bowl and microwave it for about 1 minute (until the cheese is melted).
Mix well and add the powdered pork rinds, salt, and egg. Use a hand mixer to combine all the ingredients.
Line a baking sheet with parchment paper. Place dough on it and pat it out to make a circle.
Bake for about 6-7 minutes
Remove from the oven. That’s it! To make a pizza, add keto-friendly pizza sauce on top and mozzarella cheese. Then, bake for 5 more minutes.
Notes
Mix ThoroughlyMake sure every ingredient is mixed really well. Run a stand mixer or hand mixer on high for about one to two minutes, pausing to scrape the bowl so nothing sticks to the sides.Beat the egg into the warm butter and cheese until the batter looks light and airy and no streaks remain. Bits of dry pork rind powder or stray cheese shreds will cook up flaky, not smooth, and spoil the crust’s texture.Shape EvenlyAfter you mix the dough, turn it out onto a big sheet of parchment so you have room to shape it.Gently press the dough into a round about a quarter-inch thick, spreading the edges as you go and keeping the sides even all around. If parts are thinner, they will brown too quickly. Use a rolling pin if needed to smooth bumps and perfect the circle.CoolingWhen the crust comes out, leave it on the tray before piling on toppings or baking again. Around ten minutes lets it firm up instead of soaking up moisture. This brief rest lets the eggs and cheese set solid. If you rush, the base stays soft, bends under the toppings, and turns gummy.
