Instructions
In a food processor, combine all dry ingredients until well mixed. Then, add wet ingredients and blend for about 20 seconds.
Let the batter rest for at least 15 minutes. Meanwhile, preheat your pan or griddle.
Pour medium portions of batter onto the heated griddle or pan.
Cook for 4-5 minutes until bubbles form on top, then flip and cook for an additional 4 minutes.
Serve and enjoy your delicious carnivore diet pancakes!

Don’t Overblend The BatterBlend the ingredients only until they come together and the pork-rind crumbs disappear. If you keep the processor running, the mixture thins out and the pancakes lose their rise, turning flat and heavy.Don’t Press Down On The PancakesLet the pancakes cook undisturbed. Pushing on them with a spatula forces out the air that makes them puff, leaving you with dense, rubbery rounds instead of light, fluffy stacks.
