Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, thoroughly whisk the eggs until well combined. In a separate larger bowl, combine the pork rind crumbs, shredded parmesan cheese, and minced garlic. Mix well.
Add black pepper to the coating mixture and stir to combine.
Take each chicken wing and dip it first in the beaten egg mixture, allowing any excess to drip off. Then roll it in the garlic-parmesan-pork rind coating, pressing gently.
Arrange the coated wings on your prepared baking sheet. Bake for 30-40 minutes, or until the coating becomes golden brown and crispy, and the chicken is completely cooked through.
