Start by preheating the oven to 325°F and lining two baking sheets with parchment paper.
Add the cream cheese, egg yolk, and vanilla stevia to a medium bowl. Mix well and then transfer to a pastry bag.
Separate the eggs – placing the egg whites in one bowl and the yolks in another. Then, add 3 oz cream cheese, stevia drops, and whey protein to the yolks. Mix until smooth.
Whip the egg whites with cream of tartar until stiff peaks form.
Fold the yolk mixture into the beaten whites (do so gently – you want it to be airy!). Use a rubber spatula and be careful.
Now for the fun part: Spoon 12 mounds of the egg batter onto the baking sheets (6 on each), and flatten them slightly.Pipe the cream cheese mixture onto the center of each one and bake at 325°F for 25-30 minutes. Enjoy!

Note: While Vanilla Stevia Drops are not carnivore friendly, I use only a tiny amount to add sweetness. I like enjoying treats like these cheese danishes from time to time. You can also omit the stevia.
