Step 2

Wrap a slice of bacon around each mozzarella stick. Start at one end and roll the bacon around the cheese stick until you reach the other end.

Melt the beef tallow in a skillet. Once the tallow is hot, place the bacon-wrapped cheese sticks in the pan.

Step 4

Turn the cheese sticks as each side of the bacon gets crispy.

1. Freeze the Cheese Sticks All the Way Through

This is probably the most important step in the whole recipe, so please do not skip it or rush it.

The mozzarella cheese sticks need to be completely frozen before you wrap them in bacon and put them in the hot tallow.

If they are not frozen all the way through, the cheese will start melting too fast once it hits the heat, and it will ooze out of the bacon before the bacon even has a chance to get crispy.

You will end up with a pan full of melted cheese and bacon that is falling apart, which is not what you want. 

2. Wrap the Bacon Tightly with No Gaps

When you wrap the bacon around the cheese sticks, you want to make sure you do it tightly and cover as much of the cheese as possible.

The bacon is not just there for flavor, it is also acting as a protective layer that keeps the cheese inside while it cooks.

But if you bite into one right after it comes out of the pan, two things will happen. First, you will probably burn your mouth because the cheese inside is extremely hot, much hotter than you expect.

Second, the cheese will be so melty and liquid that it might squirt out and make a mess. If you give the mozzarella sticks just one or two minutes to rest after you take them out of the tallow, the cheese inside will cool down slightly and become a little more stable.

Yes, you can absolutely use string cheese instead of mozzarella sticks, and honestly, they are pretty much the same thing. String cheese is just mozzarella cheese in stick form, so it works perfectly for this recipe.

Can I make these in an air fryer?

Yes, you can definitely make these bacon mozzarella sticks in an air fryer, and many people actually prefer this method because it is quick and requires no oil at all. To make them in an air fryer, preheat your air fryer to 370 to 380 degrees Fahrenheit.

Place the frozen bacon wrapped cheese sticks in the air fryer basket in a single layer, making sure they are not touching each other.

Cook them for about 8 to 10 minutes, flipping them halfway through so both sides get evenly crispy.
