3tablespoonsEgg White Powder(use this powder – amazon link)
1teaspoonWhite Vinegar
1tablespoonUnflavoured Beef Gelatin
2 1/2tablespoonsButtermelted
1/3teaspoonBaking Soda
Instructions
Place these ingredients in a mixing bowl: cream cheese, egg yolks, beef gelatin, egg white powder, melted butter, and white vinegar.Use a hand mixer to combine everything together (start slow). Make sure there are no clumps (it should be mixed very well and look smooth).
Whisk the egg whites (I used a hand mixer). After about 2 minutes, add the baking soda and mix again until stiff peaks form.
Combine the mixture from step 1 and the egg white mixture. Mix very well! It should be fluffy.
Take a silicone burger bun pan. Brush it with tallow or butter to prevent sticking. Place the mixture into the pans, leaving a bit of space at the top so they can expand. You can add sesame seeds on top.
Preheat the oven to 375°F (190°C). Once hot, place the silicone burger bun pan on a baking sheet, and then put it into the oven. Bake for about 15 minutes.Turn off the oven, open the oven door just a bit (leave it 1-2 inches open), and let the buns “bake” for 10 more minutes or so. Enjoy.
