Instructions
Add the eggs, cottage cheese, black pepper, and salt to a medium bowl. Whisk everything well.
Place a skillet over medium-low heat. Add the beef tallow or butter.
Once the skillet is hot, pour in the egg mixture. Use a rubber spatula to constantly fold everything. Don’t let it cook for more than 10 seconds without folding, and moving around. That’s what gives it its texture and fluffiness.
