3Egg Yolks
2teaspoonsLemon Juice

Instructions
Prepare the double boiler: Fill a saucepan with about 2 inches of water. Place a heat-safe bowl on top, ensuring it doesn’t touch the water.
Mix the ingredients: In the bowl, combine 1 cup of yogurt, 2 tablespoons of lemon juice, and 2 egg yolks. Whisk these together until well blended.
Cook the sauce: Bring the water in the saucepan to a gentle simmer over medium heat. Stir the mixture in the bowl frequently with a whisk or spoon. Continue cooking for about 15 minutes until the sauce thickens.
Monitor the consistency: Note that around the 9-10 minute mark, the sauce may become thinner. Don’t worry – keep stirring and cooking, and it will thicken again.
Finish and season: Once thickened, remove the bowl from heat. Stir in 1/4 teaspoon salt, 1 teaspoon mustard, a pinch of pepper, and 1 tablespoon of chopped dill or parsley (if desired). Mix well and serve immediately.

Note: While lemon juice and mustard are not typically part of the carnivore diet, we only use a tiny bit to add flavor.
