Preheat the oven to 400°F (200°C). Spray a 12-hole muffin tin with cooking spray.
In a bowl, combine the sausage meat with the pork rinds. Divide the mixture into 12 equal portions. Press each portion into the bottom and up the sides of each muffin cup, creating a well in the center.
Crack an egg into each sausage cup and sprinkle with salt and pepper.
Bake in the preheated oven for 25-30 minutes.
Remove the muffin tin from the oven and sprinkle the tops of the eggs with shredded cheese (optional step. This time I didn't add the cheese, and they were still delicious) and rosemary (if using).Return the tin to the oven and bake for 7-10 minutes, or until the sausage is fully cooked and the cheese is melted.
