Notes
Don’t OvermixStop stirring as soon as the meat, cheese, and pork-rind crumbs look evenly blended. When you can’t spot any plain ground beef, you’re done.Working the mixture any longer squeezes the meat proteins together and leaves you with firm, dry meatballs.Try Different Types of CheeseFeel free to swap the Parmesan for other cheeses you love. Cheddar adds a bold bite, mozzarella melts into stretchy pockets, Monterey Jack stays mild and creamy, and pepper jack brings a gentle heat. Pick one or mix a few for new flavors every time.Add Extra Cheese on TopAfter the meatballs finish cooking, scatter a little more shredded cheese over them and let the heat melt it. This quick step gives each bite an extra gooey, cheesy finish.
