Start by preheating your oven to 350F / 175C.Heat a large skillet over medium-high meat. Add the sausage and cook the meat until it’s fully cooked. Don’t overcook. Use a wooden spoon to break the meat apart while cooking.
Spread the sausage over the bottom of the dish (I used a 9×13-inch casserole dish).
Take a large bowl and whisk the eggs, heavy whipping cream, hot sauce, and shredded cheese. Evenly pour the mixture over the sausage.
Bake for 35-40 minutes. And now, you can enjoy this amazing carnivore casserole!

Don’t Overcook The SausageCook the sausage just until the pink is gone and it looks cooked through, about five to seven minutes over medium-high heat. It should stay juicy-remember it will finish cooking in the oven-so a little bit of pink or pale color is fine.Grease The Baking Dish WellRub the whole baking dish with butter, ghee, or the fat left from the sausage, making sure you reach into the corners and up the sides. A quick layer of parchment on the bottom also helps the casserole lift out cleanly.Keep An Eye On The Baking TimeStart checking after about 30 minutes. The casserole is ready when the edges look set and lightly golden while the center still trembles a little - it will firm up as it cools.If the top browns too fast while the middle stays loose, lay a sheet of foil over it so it doesn’t burn.
