👨‍🍳 Keto Turtle Ingredients

For this sugar free turtles recipe you will need the following ingredients:

6 tablespoon Swerve Brown Sweetener

3 tablespoon Allulose (or xylitol)

5 tablespoon Butter

1/2 cup (120g) Heavy Whipping Cream

1/4 teaspoon Xanthan Gum

1/4 teaspoon Sea Salt

2 cups (200g) Pecan Halves

4 ounces (115g) Sugar-Free Low carb Dark Chocolate (chopped)

⭐ How To Make Sugar Free Turtle Candy

Follow these easy instructions to make the perfect low carb turtles:

Step 1

Preheat the oven to 350F – 175C.

Place a saucepan over medium heat. Add the sweeteners and 4 tablespoons of butter.

Mix them and bring to boil. Cook for 4-5 minutes.

Right after removing it from the heat, add cream. The mixture should be bubbling at this point.

Step 2

Return the saucepan with the mixture back to the heat.

Let it boil for a few minutes and then sprinkle xanthan gum and salt. Whisk everything well to combine.

Let the mixture cool down for 40-60 minutes- it should be thick, but still pourable to continue with the recipe.

Step 3

Line a cookie sheet with parchment paper. Spread the pecans on the paper and roast them in the oven for about 10 minutes (make sure not to burn them).

Step 4

Arrange the pecans in clusters – 4-5 pecans for each.

Use a teaspoon to drizzle the caramel mixture over each cluster. Then, place the sheet in the freezer for about 20 minutes.

Step 5

Take a small bowl and set it over another bowl of simmering water. Combine the chocolate with the remaining butter.

(You can also just microwave the ingredients and mix them well – but the first method is better).

Once everything is combined and melted – drizzle it over the pecan clusters.

Step 6

Place in the freezer for 30 minutes and then…. serve! Enjoy these delicious sugar free turtles.

Can You Use Different Sweeteners?

I understand that buying specific sweeteners for each recipe is not ideal, but you have to understand that the type of sweetener you use is very important when you are baking sugar-free.

The textures and flavors of sugar free baked goods can be very different depending on the type of sweetener you use.

Instead of Swerve Brown Sweetener, you can use Sukrin or Lakanto. Both are similar and will give you the same results.

Instead of Allulose, you can use Bocha Sweet or xylitol.

Can You Freeze These Keto Chocolate Caramel Turtles?

I don’t recommend freezing these keto chocolate turtles because their texture will change.

It’s best to keep them stored in the fridge in an airtight container and enjoy them within a week.
