What Is Beef Shank?

Beef shank, also known as beef shin or osso buco, comes from the upper part of the foreleg of cattle. Because this muscle is in constant use, it is very hard, tough, and dry – full of connective tissues.

But- if you know how to prepare it right (and this shank meat recipe is a great starting point), it becomes absolutely delicious.

The gelatin inside the meat melts in your mouth. The osso bucco beef cut is inexpensive -but can become tender and tasty with less than 10 minutes preparation time and a few hours in an oven.

Beef Shank Bone-in / Boneless

You can buy beef shank with the bone-in (“cross cut shank “, they look like steaks – some call each of them a shank steak), or boneless.

Both options are fine for this beef shank recipe. Some prefer the beef shank with bone because its bone contains bone marrow. It’s like a desert. Eat your beef shank meat and then scoop out the bone marrow. So healthy and great for your keto diet.

Osso Bucco Meat – Superfood!

Beef shank steak contains a lot of collagen, which becomes gelatin when cooked for long periods of time. This makes the shank cut extremely tender. If you have never tasted it before, you will be surprised at how rich and flavorful it is.

Osso bucco beef meat is cheap (beef shank price is very low if you buy it frozen), but when handled correctly, it can be very tender while still retaining its deep flavor. Many meat-lovers prefer these kinds of cuts because they have a more complex taste than other cuts of beef.

Additionally, cross cut shank is considered a “superfood” due to its anti-aging properties.

These amino acids are very important for skin health as well as bone health. By eating osso bucco beef shank, you get plenty of these amino acids.

Combined with low carbs and a healthy diet (aka keto) – you are on the right path to “anti-aging”. I eat cow shank almost every week. Sometimes I will prepare up to 8 pounds of it at once, and vacuum seal & freeze some of it.

  • 2-4 lbs Beef shank
  • Seasonings
  • 2 tbsp Liquid Smoke (optional)
  • Cut the beef shank into large pieces, approximately 1 pound each (450gr). Some butcher shops sell beef shank pre-cut (to fairly small pieces) .
    In that case, just use these pieces. I prefer to buy the whole shank and cut it myself because then I can control the size of the meat.
  • Place the meat in a deep aluminum baking tray. You can use a disposable one like I do.
  • Cover the meat with water and add 1-2 teaspoons of liquid smoke (optional)
  • Season the meat generously with spices like black pepper, salt, cumin and chili pepper.
  • Cover everything with aluminum foil. Make sure it is tight so steam won’t escape.
  • Put in a pre-heated oven at 370F (190C) for 4.5 hours. That's it!

Beef Shank Instant Pot

If you want to save time (and indeed – slow cooking beef shank for 4.5 hours is a lot of time when you are hungry)- you can use a pressure cooker.

Nowadays there are so many models of pressure cookers to choose from. They are much safer than devices 50 years ago, so you really don’t need to worry about “accidents”.

Using a pressure cooker – you can prepare osso bucco beef in about 2 hours. The meat comes out exactly the same – tender and super tasty. I tried making beef shank in my Ninja pressure cooker – and it’s great.

Smoked Beef Shank

One of the most delicious ways to enjoy beef shank is to smoke it once it’s cooked. But, if you don’t have a smoker, you can still get that same great flavor by using liquid smoke.

Liquid smoke is a natural product. It’s made by condensing the smoke from burning wood chips, and it imparts a deep, rich flavor to meats that have been cooked in it.

Beef Shank Substitute

There are some good substitutes for beef shank, depending on what you are looking for. Some of the best substitutes would be pork shoulder, lamb shank, or even a beef brisket.

Keep in mind that beef shank is full of gelatin, which other cuts may not have as much of. This helps give it a unique texture and flavor that you might not be able to find in another cut.  


* Do not cut the meat into small chunks when preparing it. The bigger they are, the more tender and less dry they will be. I came across many beef shank recipes that overlook this.

* Adding liquid smoke to the water will add a slightsmoked flavor to the meat, as I suggested. Try it out and you may be surprised (perfect for this beef shank recipe).

* After 4 hours, take the tray out of the oven. Let itcool down for 4045 minutes, still covered with aluminum foil. This allows the meat to absorb some of its juices back.

* You can mix beef shank with other cuts like beef ribs or beef neck, and the cooking time will remain the same

* Some people prefer to use much lower temperatures (250 F, 120 C) and let the meat cook overnight. This version of the beef shank recipe is great as well.
