For this low carb tomato soup recipe you will need:

  • 4 Medium Tomatoes*
  • 4 Garlic Cloves
  • 2 Cups Chicken Broth
  • 3 1/2 tablespoons Olive Oil
  • 1 tablespoon Herbs (thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf)
  • 3/4 teaspoon Black Pepper
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Salt

* You can use 28oz Canned Whole Tomatoes instead.

🍅 Making Keto Tomato Soup

Follow this simple keto tomato soup recipe:

Step 1

Start by preheating the oven to 400F (200C).

Then, place the tomatoes and garlic cloves on a baking sheet and add a bit of olive oil on top. Roast them in the oven for 25-30 minutes.

Step 2

Peel and remove the tomato skins. Transfer the tomatos, garlic and olive oil to a food processor (a blender can be used instead).

Puree until the consistency is smooth.

Step 3

Combine the puree with the broth and seasonings in a stockpot. Mix well and place over medium heat until it boils. Then simmer for a few minutes.

Add some heavy cream and… that’s it! I recommend serving this low carb tomato soup hot.

Carbs

A cup of this keto tomato soup contains just 4 grams of net carbs. So, you can eat it in moderation as a side dish. It goes really well with chicken or fish, and I also personally really like eating it with steak.

Freezing

I rarely freeze soups, but I heard that many people actually do it on a regular basis. I imagine that this low carb tomato soup would freeze pretty well.

Simply let it cool completely and then pour it into freezer-safe bags or containers, removing as much air as possible.

To reheat, simply thaw in the fridge overnight and then heat on the stove over low heat until warmed through.
