🥮 Making Sugar Free Tiramisu Cake

Follow these simple steps to make the perfect tiramisu keto cake:

Making The Cake

Step 1

Start by preheating your oven to 350F (175c), and lining a 8 or 9 inch square pan with parchment paper.

Then, beat the butter and sweetener in a bowl until fluffy.

Step 2

Add eggs and beat them in. After that, add heavy cream and vanilla, and mix.

Step 3

Add almond flour, baking powder, salt, and beat everything in. The mixture should look smooth.

Step 4

Place the dough in the lined pan, and smooth the top until it is level.

Step 5

Bake for about 20 minutes. It should turn brown-golden. You can use the well-known toothpick test. Insert it, and if it comes out clean, it is done.

Making The Filling

Step 1

Combine the egg yolks and the powdered sweetener in the top of a small double boiler over boiling water. Cook for about 8 minutes over low heat, and mix constantly.

Toward the end, the mixture will increase in volume.

Step 2

After removing the mixture from the heat, whip the yolks using a hand mixer – until thick. Set it aside for now.

Then, take another bowl and whip heavy cream until stiff peaks form (shouldn’t take long). Avoid over-whipping.

Step 3

Add mascarpone cheese to the yolks and beat at a low speed until everything is combined. Then, fold this mixture into the whipped cream.

Final Steps

Step 1

Transfer the cake to a cutting board.

Then, take a small bowl and mix the espresso and brandy together. Pour it over the cake in an even layer.

Step 2

Cut the cake in half. Place one half onto a platter.

Top it with half of the cream mixture, and place the second half on top. Add the remaining cream mixture on top of it.

Step 3

Sprinkle cocoa powder over the tiramisu. Refrigerate for at least 4.5 hours. Then, slice and serve!

Enjoy! This keto tiramisu cake takes some time to make, but the result is an elegant and delicious cake that’s perfect for a special occasion.
