1 3/4 cups Almond Flour

1/3 cup Cocoa Powder

1 Egg (beaten)

1/3 cup Swerve Sweetener

1 teaspoon Baking Powder

1/4 teaspoon Salt

2 tablespoon Butter (melted)

1/2 teaspoon Vanilla Extract

For The Coating:

1/2 (20g) ounce Cocoa Butter 

7 oz (200g) Keto Dark Chocolate – choose a chocoloate with sweetener, otheriwse, the cookies will be bitter.

1 teaspoon Peppermint Extract

🍪 How To Make Sugar Free Thin Mints 

Follow this keto thin mint recipe and the simple steps, and you will have delicious sugar free thin mint cookies ready to eat in no time!

Step 1

Start by preheating your oven to 300F (150C). Then, line two baking sheets with parchment paper.

Take a large bowl and mix almond flour, cocoa powder, sweetener, baking powder, and salt together.

Once it’s combined, add an egg, butter, and vanilla extract. Stir until a dough forms.

Step 2

Roll out the dough between two pieces of parchment paper. The thickness should be around 1/4-1/5 inch.

Use a cookie cutter to cut out circles. Place them on the baking sheet.
