For this keto stuffed mushroom recipe you will need the following ingredients:

  • 22 medium Button Mushrooms
  • 3oz (85g) Cream Cheese
  • 6oz (170g) White Cheddar (grated)
  • 2 cloves minced Garlic
  • 2 1/2 tablespoon Butter
  • pinch of Salt
  • pinch of Pepper

🍄 Making Low Carb Stuffed Mushrooms 

To make these stuffed keto mushrooms – follow the simple instructions below:

Step 1

Preheat the oven to 350F (175C) and grease a ceramic baking dish.

Start by rinsing the mushrooms and removing all the stems. Pat them dry with a paper towel and then proceed to finely dice the stems.

Step 2

Place a skillet over medium heat, and grease it with butter. Add the mushroom stems and garlic.

Saute them until they’re soft and have a strong smell. It should take about 3-4 minutes at most.

Step 3

Add the sage, salt, and pepper, and cook for another minute or two. Let everything cool for about 7 minutes.

Step 4

Take a large bowl. Place the cream cheese, sauteed mushrooms, and grated cheese inside. Mix them well using a rubber spatula.

Step 5

Place the mixture into each one of the mushroom caps. Place them in the baking dish, and bake in the oven until soft – it should take about 20 minutes.

Cheese

To make these low carb stuffed mushrooms, I used white cheddar cheese. You can also use regular orange cheddar or even mozzarella. I just prefer the white cheddar for these because it doesn’t overpower the taste of the mushrooms.

Other types of cheese would be good too, like Swiss or Gruyere. Just make sure to use a full fat cheese, as the lower fat cheeses won’t melt as well.

You can also mix and match cheeses, like using half mozzarella and half cheddar. It can really be any combination you like!

Just make sure the cheese you are buying to make these no carb stuffed mushrooms is actually REAL cheese, and not a cheese product.

The ingredients should just be milk, salt, enzymes, and maybe some annatto for color (this is safe on keto).

I came across some “cheese” at the store the other day that had over 15 ingredients, including sugar! That’s not real cheese!
