To make the strawberry keto bread, you will need the following ingredients:

For The Bread

  • 5 Eggs (large)
  • 1/2 cup Butter (melted)
  • 2 1/4 cups Almond Flour
  • 3/4 cup Xylitol (or monk fruit & Erythritol Blend)
  • 2 tablespoons Coconut Flour
  • 3 teaspoons Baking Powder
  • 2 tablespoons Almond Milk (unsweetened)
  • 1 1/4 teaspoon Strawberry Extract
  • 3/4 teaspoon Pure Vanilla Extract

For The Glaze

  • 1 cup Powdered Monk Fruit Sweetener
  • 3 tablespoons mashed Strawberries
  • 1 tablespoon Butter (melted)
  • 2 tablespoons Heavy Cream
  • 3/4 teaspoon Pure Vanilla Extract

Strawberries

  • 3/4 cup diced Strawberries
  • 3/4 tablespoon Coconut Flour

🍓 Making Keto Strawberry Bread 

Follow these simple steps to make the perfect sugar free strawberry bread:

Step 1

Start by preheating the oven to 350F (175C). Line an 8×4 or 9×5 loaf pan with parchment paper. Grease it with a bit of melted butter.

Dice the strawberries, and add them to a mixing bowl. Add 1/2 tablespoon of coconut flour, and mix well.

Step 2

Add eggs, coconut oil (melted), almond milk, sweetener, vanilla, and strawberry extract to a bowl. Mix and beat until well combined, and then set aside for now.

Step 3

Take another mixing bowl and mix coconut flour, almond flour, and baking powder.

Then, pour the beaten egg mixture from the previous step into it, and mix very well.

Step 4

Add in the diced strawberries, and mix again. Pour the batter into the loaf pan. Bake for about 65 minutes.

After 25-30 minutes – cover it with aluminum foil and continue baking. This prevents the top from over-baking and burning.

Step 5

Let the keto strawberry bread cool down for at least 20 minutes. Then, pull the parchment paper and remove it from the pan.

To Make The Glaze

Add the powdered sweetener, melted butter, vanilla extract, and heavy cream to a mixing bowl. Mix well until everything is combined.

Then, mash about 3 tablespoons of fresh strawberries, and add to the glaze.

Allow the keto strawberry bread to cool down for at least 2 hours, and then spread the glaze on top.

You can skip the glaze part, but I really think it’s worth it.

Freezing

You can freeze the low carb strawberry bread, for up to 3 months. I recommend vacuum sealing it first, it will keep it fresher for longer.

To thaw, just leave it out on the counter for a few hours. The texture may be slightly different after being frozen, but it will still taste delicious!
